I hope this page gets filled with a lot of wonderful recipes from our members.  I am going to start it off with a recipe I am so hooked on now.  It is really funny how this recipe came to me because I wrote a piece about Sandwich Wraps and in the process was looking for some interesting flat breads and such.  I came across some video for Naan Bread and now I cannot be without them.  Here is the recipe I came up with after watching a lot of videos. 



Naan Bread

I have learned since this picture I can cook the bread lighter and they taste better because the char taste is not as strong.

Mix 1 package of yeast, 1/2 cup of warm water and 2 T. honey Allow it to set for a few minutes until it foams.  Add 6 oz. of plain yogurt, 1 egg and 2 T. canola oil and beat together until well mixed.

In a bowl mix together: 

2 1/4 cup of flour
1 teaspoon of low sodium baking soda
1 teaspoon of sugar
2 Tablespoons of Parmesan Cheese

Add the yeast mixture to the flour mixture and knead for a few minutes.  Spray a dish lightly and place in dough ball and cover with wrap or a towel.  I personally place my dish in the oven (turned OFF of course) and let it rise for 2 hours.

After two hours, lightly dust your working area and knead your dough for another minute or so.  Cut the dough into eight pieces and gently make ball shapes dusted with flour.  Place the dough balls on a plate and put back in the oven for another 30 minutes to rest.

Start reheating your stainless steel pan on medium heat until it gets hot.  Take each ball and flatten it by hand on a lightly floured working area. When your frying pan is hot, place the flatten dough in the pan and cook for 3 minutes.  At this point you may want to turn your heat on low.  Melt some butter and lightly spread some on top of the Naan bread that is cooking and once again when you turn it-which at that time you will cook for another 2 minutes.

I place a dish towel on a plate and as each bread is cooks, I place it on the towel and cover it.  You would do the same thing for each of the eight breads.

Upside Down Apple Pie Coffee Cake

This cake is a great way to get into the spirit of the holidays.  It is simple to make, and so nice to have with that first cup of coffee in the morning.  You will find all sorts of ways to prepare it to make it special in your home as well.

Here is what you'll need to make this simple yet yummy cake:

1 box white or yellow cake mix
5-7 apples, use cooking type apples ie: Granny Smith
1 cup of sugar
1 stick of margarine
1-2 packets of instant oatmeal, apple cinnamon flavored
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. vanilla extract
1 glass 9x13 inch glass baking dish (optional, but preferred)

Step one:
Lightly butter the interior of your baking dish and set aside
Step two:
In a medium to large skillet, saute your peeled apple slices until they are semi soft with on stick of melted margarine.  Add in sugar, spices, vanilla extract and the two packets of instant oatmeal.  Pour into the glass baking dish in an even layer and either set aside or place in the refrigerator until needed.
Step three:
In large bowl prepare cake mix as directed on the box
Step four
Pour cake mix over the apple mixture in the glass baking dish and bake at the temperature suggested on the box.  Cake is done when toothpick inserted in the middle comes out clean, usually depending on your oven around 25-35 minutes. 
Step five:
Once cake has baked, allow to thoroughly cool.  Run a butter knife along the edges to cake will come away from the dish easily.
Step six: (optional)
Cover a cookie sheet with parchment paper, or tin foil, and place cookie sheet over the top of the cake, gently invert the cake so that the apple pie cake flips onto the cookie sheet.  If a few pieces of apple remain stuck to the dish simply remove them with a butter knife or spoon and replace them on the top of the cake.  Garnish with additional cinnamon, and apple slices.  Enjoy!
